Properties and Harvesting

Cinnamon is a spice that comes from the bark of tree that is native to Sri Lanka. The affinity between the spice and the island strong, so much so that its botanical name Cinnamomum zeylanicum originated from Ceylon, the island's former name. It is also known as Ceylon Cinnamon or ‘true cinnamon’.  The Cinnamon tree is evergreen and can grow up to 7 metres tall in its natural state. However, trees used in cultivated plantations are often grown as bushes and reach a height of around  3 metres, as they are regularly cut back to produce new stems of bark.

It thrives in wet, hot tropical climates at low altitude and can be ready to harvest after three years. The plant is harvested in the rainy season as it encourages the peeling of the bark. Harvesting requires the removal of the stems then drying for 24 hours. The inner lining and outer bark are flaked off, and the curled pieces of peeled bark are placed one inside the other to make long quills.  After leaving in the shade to dry, the quills are then cut into smaller lengths and graded according to appearance, aroma, and thickness. They can also be ground into true Ceylon cinnamon powder.

The fragrant, sweet taste of true cinnamon is available throughout the year, and is a perfect spice for a wide range of recipes. In cookery, it is mainly used as flavouring, being largely used in the preparation of all kinds of desserts, chocolate, spicy candies, tea, hot cocoa, and liqueurs. Ceylon cinnamon sticks and powder are used in savoury dishes of lamb and chicken in the Middle East, and in the West is popular as flavouring for cereals and fruits.

Use in Medicine

In medicine, cinnamon once had a reputation as a cure for colds. It's high in antioxidants and has been used to treat digestive problems. Oil extracted from true cinnamon also has antimicrobial properties, which helps in the preservation of certain foods. There have been reports that it has pharmacological benefits in the treatment of type 2 diabetes. Other traditional uses include the treatment of bad breadth and toothache.
